INGREDIENTS:
- 1 large sweet potato
- 3 tablespoons oil
- 1/2 cup onions, choppd
- 1/2 red pepper, chopped
- 1 green onion, chopped
- 1 garlic clove, minced (or 1/8 teaspoon garlic powder)
- 1 teaspoon smoked paprika (or less)
- salt and pepper to taste
- 2 tablespoons chopped fresh parsley or chives
METHOD:
Add sweet potato into a large saucepan of boiling water and let it boil until it is tender. Drain and dry the potato with paper towel. Peel and slice the boiled potato into cubes of 1 inches.
Heat 2 table spoon of oil into a saucepan at medium heat, add onions,red pepper, green onion, garlic saute till all the vegetables and tendered and golden brown, Season the vegetables with salt and pepper.
Add 4 table spoon of oil into skillet and then add diced sweet potatoes in it. Stir sweet potatoes gradually on medium heat until they are tender. Keep on gradually stiring until the potatoes are golden brown. Once the golden colour is achieved then add the vegetable mixture in it and mix it well. Add paprika and parsley on the top and serve.
